Okay, so this label isn’t even retro-cool old, it just looks unfashionably old, but get beyond that and this is actually a lovely half bottle of fresh and buttery Chablis. If you pair a Chablis with something like sushi, it’s tempting to go for a lighter style of Chablis (Petit Chablis or a Chablis, i.e not a Premier Cru Chablis or a Grand Cru Chablis).
But…. a richer style, like a Premier Cru, is actually great because it has enough freshness for the likes of sashimi and maki but it also has enough oomph and depth of flavour to work with the heat of the wasabi and the depth of the soy sauce.
