Okay yes, it is fortified, and yes, it is 20% in strength. But……. it is also meltingly smooth with gorgeous seductive characters of caramelised nuts and marmalade. This is a dry, supple and really balanced Palo Cortado (a style of Sherry) which is nothing short of a match made in heaven with a few slices of jamón. The key to its complexity is the wine’s average age of 12 years which has condensed the flavours, leading to a supremely long finish.
